Tabouli Inspired Dish - A Must Make!

Weeknight dinners in our household are pretty rushed. My son still can’t eat everything I eat (raw cherry tomatoes and peppers) so sometimes I’m whipping up two different things. Luckily, it’s pretty easy to feed him. Avocado and tofu on toast or yams, olive oil, quinoa and orange slices. More prep and toss together versus actual meals.

On this particular night, I had tons of fresh herbs and cooked brown rice. I decided to make a tabouli inspired dish. You don’t need to copy this exactly, let it inspire you based on what you have at home. Use as much or as little of the herbs as you’d like. I did have some parsley leftover. All ingredients are organic except for the smoked tofu (non GMO) for optimal hormone healing and gut health. The acid from the apple cider vinegar will help your blood sugar levels which is also directly linked to hormone health.

Ingredients

  • 1 bunch flat parsley or cilantro

  • 1 bunch curly parsley

  • 1 bunch mint

  • 1 bunch of dill

  • grain of choice, I had 3 cups of brown rice left already cooked. Quinoa would be delicious

  • cucumber

  • bell pepper, I had a yellow one

  • cherry tomatoes

  • smoked tofu

  • dressing: olive oil until coated enough, 1-2 tbsp of apple cider vinegar, 1-2 cloves of garlic

Recipe

  1. Use cooked grain or soak your grain of choice overnight, dump water, wash and cook according to the package. I used a few cups to feed two of us and I thought we would have leftovers, but we devoured this

  2. Wash and cut fresh veggies and herbs adding to the rice bowl

  3. cut your smoked tofu or if you’d like add beans

  4. mix EVOO, ACV and garlic. I literally just added it all the one giant bowl, but you can make the dressing in a separate bottle then add as much as you’d like. Finely chopping the garlic is key.

  5. feel free to finish with black pepper or salt, we didn’t

  6. enjoy! it is that easy
