Lemon Dill Purple Potatoes
I love eating the rainbow for optimal health so I opted for purple potatoes this time around. We get different vitamins and minerals based on the colour of the food we eat. Aim for a variety and switch up the veggies you buy each week. This is a super easy recipe and just modify to make it your own. You know I’m not the biggest fan of measurements! Here we go.
ingredients
1 big organic lemon or 2 small
1 bunch of dill, roughly chopped
2 -3 tbsp of extra virgin olive oil (i even add a splash of water to retain moisture without lots of oil, but they won’t be crispy)
black pepper and a pinch of sea salt
2 cloves of garlic, chopped
12-15 small purple potatoes, can use white too!
directions
option to let marinate, but I’m too impatient for that
preheat oven to 375
rinse potatoes
cut potatoes in half or if larger, quarter them and place in big glass dish
squeeze lemon juice into dish and can even cook with lemon in there for more flavour
add evoo, salt, pepper, garlic
bake for 30-40 minutes or until desired consistency. can add baking soda to help crisp up!
add fresh dill.
I added the dill before roasting and it tastes great, but doesn’t look as pretty. Enjoy on the side of a salad or add to a buddha bowl like I did.
