Spiced Apple Chaga Goji Oatmeal
It’s Fall and I’m into all the comfort foods. You?
I’ve made this after a morning workout with a big cup of matcha in hand. It was such a lovely way to start a weekday as I’m usually rushing. Get creative and use what you have at home. This is the perfect meal to prep for your work week breakfast or for the family. This is vegan, has no added sugar and gluten free. I opted for the gluten free certified oats, meaning they aren’t processed in a facility with gluten. Note, some clients with celiac are still sensitive to oats so listen to your body.
INGREDIENTS
2 cups of soaked organic old fashioned or steel cut oats. I soak mine over night in a bowl with lots of water
cover with water, you don’t need as much if oats are soaked!
2 organic honey crisp apples, or your favourite variety
4 tbsp. of organic chia seeds
1 cup shredded coconut
1/3 cup of organic goji berries
spices: true cinnamon, sea salt, pumpkin spice mix
1 tsp chaga (medicinal mushroom)
top with a tbsp of NuIT almond butter and a little almond milk
option to add plant-based protein powder
directions
Soak oats in a bowl overnight, rinse well then add to pot with more than enough water to cover
Cut apples into chunks
Bring oats to boil then turn down to simmer and add apples
Add the spices
I like to add the coconut, chia and goji berries when the oats are almost done
I then mix in chaga, protein powder and top with Nuit
Enjoy with a splash of nut milk
