Fudge Brownies: vegan and grain free
this is the best brownie i have ever made - you need to make these!
I rarely bake sweets these days, but I’ll be making these again soon. Vegan, gluten-free and no refined sugar added. There super fudge-y, a little crumbly and so delicious. Next time, I think I’ll double the recipe and do it in a rectangular dish. The original recipe is from Basic with Bails, but I switched up 3-4 things to make it my own. It focuses more on natural whole foods and has less oil, which is how I like it.
Ingredients
The Brownie
4 chia eggs and let sit for 10 minutes
1 cup almond flour
1 1/4 cup organic cacao powder
1/2 cup organic peanut butter melted
1/2 cup maple syrup
1/2 cup coconut oil melted
1 tsp vanilla, I use alcohol free or ground powder
Pinch of sea salt
1/2 cup shredded coconut
The Icing
1/2 cup organic cacao powder
1 avocado
Maple syrup to sweeten
Directions
Mash icing together in bowl (any time)
Preheat oven to 325F
Line an 8 or 9 inch square baking pan with parchment paper
Mix together chia and water and let sit for 10 minutes
Combine the almond flour and cacao powder in a medium sized bowl
Mix together the peanut butter, maple syrup, coconut oil, and vanilla in a large bow
Add in salt and chia egg
Fold in the cacao and almond flour mixture using a rubber spatula. The batter will be very thick
Then fold in shredded coconut and optional nuts
Add batter to pan and smooth it out with the rubber spatula
Bake for 30-35 minutes. Let cool for 1 hour and enjoy my loves

UPDATE: Steph from NuIt made these without maple syrup and coconut oil. Genius! She blended one banana with pinto beans for sweetness and protein. I can’t wait to try this variation. 🤗
